Crostata

For 1 crostata:
- 125g unsalted butter
- 250g flour
- 80g sugar (white or brown)
- 2 egg yolks
- jam of choice


  1. Mix room temperature butter and sugar into a cream.
  2. Add the yolks to butter and mix evenly again.
  3. Sift the flour and add all at once into the butter mixture.
  4. Work with hands, mix the flour and butter into a neat dough.
  5. Wrap the dough in clingfilm and chill in the fridge for 1 hour.
  6. Heat the oven to 180C, grease the baking tray with butter. Sprinkle a tb spoon of flour in the tray and shake the flour around to coat the tray. Discard excess flour at the end.
  7. Cut 2/3 of dough and roll out thin enough to cover the whole base of the baking tray. Spoon over the jam of your choice (here I used figs jam).
  8. Using the remaining 1/3 of dough, roll to long strips and lay them across the crostata. First make the outer ring then the central diameters before secondary lines.
  9. Bake at 180C for approximately 30min till the dough looks slightly golden. Cool before serving!

Almond chocolate biscuits

To make 30 biscuits:

- unsalted butter 75g
- white sugar 25g
- brown sugar 25g
- double cream 25ml
- flour 90g
- cocoa powder 10g
- almond flakes 40-50g



  1. As the diamond sablé, mix the room temperature butter into a cream like consistency and then add and mix the sugars.
  2. Add double cream, the sifted flour + cocoa power, mix into a rough dough using your hand. Add the almond flakes last, mix evenly into a final biscuit dough.
  3. Shape the dough into desired shape, here a long rectangle. Wrap with clim film and chill in freezer for at least 30min.
  4. Preheat the oven to 170C. Cut the biscuit dough into ~1cm pieces. Bake for 17-20min at 170C.

tartlet light lunch

- 4-6 ready made savory tart case
- small pieces of sausages (using one sausage)
- baked salmon fillet (1 piece - I used left over from dinner)
- 2 eggs
- single cream, 60ml
- grana cheese, to garnish
- rocket salad or any other salad

1. Pre-heat oven 180 for 10 mins
2. Chop and sprinkle salmon / sausage in the different tart case
3. mix the eggs with cream together until thoroughly blended together
4. Pour mixture (3) into the tart cases
5. place in the oven for 10 mins
6. sprinkle grana cheese, serve with rocket on the side

oven baked seabass

Ingredients:
1-2 whole seabass
1 tsp sugar
1 tbsp soy sauce
1 tsp sesame oil
3 slices of ginger
2 spring onion, sliced
lemon wedges

To marinate the seabass, sprinkle with salt and leave over night.
1. pre-heat oven to 220c
2. wrap seabass in aluminum foil, with all seasoning ingredients
3. place in the oven for 30 mins, turning once
4. use a fork to check that the fish is cooked thoroughly, and serve with lemon wedges

parmasan roasted potato

5 potato, cut in half
50g grated parmasan
1 tsp turmeric
1 tsp chili powder
4 slices of ham
1 tbsp olive oil

1. Place the potato in boiling water for 10 mins, until slightly softened
2. Pre-heat oven to 200 mark, grease the baking tray with olive oil
3. Mix the parmasan, turmeric and chili together in a bowl
4. Drain potato, coat each one with the mixture and place on the tray
5. Place in oven for 30 mins, turning once
6. Sprinkle ham on top, and oven bake for a further 5 mins

baked potato

5 large potato, thinly sliced
2 red onion, thinly sliced
3 cloves of garlic, finely chopped
300g double cream
grated cheese
salt & pepper to season
1 tsp butter

Grease the dish base with butter, layer the dish with potato, red onion, garlic and cheese. Finish with a layer of cheese, pour cream over the top.
Oven bake for an hour.

potato layer veggie pie

300 gram of potatos, sliced
1 cup of chopped carrot
1 cupt of chopped turnip
1 onion
1 shallot
1 brocoli
grated cheddar cheese

Chopped carrot, brocoli and turnip and cook in boiled water until tender.
On medium heat, fry onion and shallot, layer sliced potatos to line the bottom of the pan, add a layer of the cooked vegetable on top, then finish with another layer of potatos, leave for a few minutes
Sprinkle a thick layer of grated cheese on top, place the pan under oven and bake for a further 5 minutes
