French Crêpes

Enough for 5 crêpes:

- 125g plain flour
- a pinch of salt
- 1/2 tsp sugar
- 1 egg
- 200ml milk
- a knob of butter
- 70ml water

  1. Sift the flour, sugar and salt into a large bowl.
  2. Mix together the egg with milk and water.
  3. Slowly add the egg mix into the flour and whisk continuously to make a smooth batter mix.
  4. Melt the knob of butter and stir into the batter mix too.
  5. Ready to cook! Grease a non-stick frying pan with butter, spoon enough batter to thinly coat the bottom of the pan. Cook and flip the crepe when the edge start to come away from the pan. Cook till both sides are golden.
Ideas: Mushroom, ham and cheese crêpe
Cook some mushrooms with butter in a frying pan. Pour away all the liquids once the mushooms are cooked. Stir in some ham and grated cheese (best is Gruyère). Spoon the filling onto a crêpe and fold into quarters. Bake in 180°C oven for 5 min and serve immediately.

tartlet light lunch

- 4-6 ready made savory tart case
- small pieces of sausages (using one sausage)
- baked salmon fillet (1 piece - I used left over from dinner)
- 2 eggs
- single cream, 60ml
- grana cheese, to garnish
- rocket salad or any other salad

1. Pre-heat oven 180 for 10 mins
2. Chop and sprinkle salmon / sausage in the different tart case
3. mix the eggs with cream together until thoroughly blended together
4. Pour mixture (3) into the tart cases
5. place in the oven for 10 mins
6. sprinkle grana cheese, serve with rocket on the side

curry puff

1 ready to bake pastry sheet, cut into squares
2 potatos, chopped into small pieces
1 tbsp curry powder
200g minced pork
1 onion, minced
2 tsp frying oil

1. place potatos in boiled water, boil for 10 mins
2. fry 2 tsp oil in a deep pan, when it's turning brown, add minced pork
3. add potatos to the meat mix, add 1 tbsp curry powder or chili powder if desired, mix well
4. set aside to cool
5. pre-heat oven to 200
6. place cooled pork/potato mix in the middle of the pastry, press the corners together using a fork
7. oven bake for 15-20 mins

Top pastry:
40g sugar
1 tsp salt
40g butter
1 egg
100g pastry flour
Mix all together and leave it aside

Bread:
140g Milk
1 egg
30g sugar
2 tsp salt
1 sachet of yeast
40g butter
200g bread flour
100g pastry flour
Mix all and set it aside for 30 mins, mix again with hands and set aside for a further 20mins
Separate the dough into 6-7 parts evenly, flatten the top pastry and smooth over the dough. Oven bake for 15 mins.

台式蔥油餅


台式蔥油餅

Taiwanese style pancake

500g flour
250g warm water
3 spring onions, chopped
peanut oil

Mix flour with water until both are well mixed
leave the dough in a tin/container and set aside, cover with wet clothes (to prevent dryness) for 20 mins
Divide the dough and roll it flat, sprinkle spring onions and oil, mix it into the dough, rol flat again, and fry in a greased pan, 1.5 minute on either side
